In order to stay on track and keep it simple, you may want to Develop a System.

For example, soak, cook, and store as assortment of legumes or grains in the same bowl. Steam a large pot of vegetables and add them to various dishes. Determine menus for the week and shop, store, and prepare based on that. Make a cashew cream base and then create cheese, sour cream, soup, tartar sauce, mayonnaise, etc. by just adding a few ingredients.

Cooking system: pressure cook legumes in batches that last a couple weeks with either a mix for a hearty cheese sauce, or a single source like soy beans for whipped cream.
